What I Ate Tuesday...

 

It's been a while since I posted a daily food log. Now that I'm back at work and settled into real life again, I figured it was high time I shared.

Breakfast
*2 slices whole wheat toast spread with 1 tablespoon natural peanut butter each and 1/2 sliced banana
*Almond milk latte

Mid-morning snack
*Vitamin Water Zero 
*Taste panel day at work so I sampled a few small bites of a few different recipes.

Lunch
*2 cups chopped Romaine lettuce
*2 tablespoons honey-roasted peanuts
*1 oz. crumbled feta cheese
*6 baby carrots
*2 tablespoons light honey mustard dressing

*Fage 2% Greek Yogurt with Strawberry
*1/3 cup Banana Nut Cheerios

Snack
*24 oz. water
*1 medium pear

Dinner
*Parmesan-Roasted Asparagus (recipe coming your way tomorrow)
*Sliced, roasted sweet potato with ketchup
*Boca Vegan Veggie Burger

Dessert
*A small slice of pie leftover from our wedding :)

Question of the day: What new food discoveries have you made lately? Anything I absolutely need to add into the weekly food rotation?

We're Mexican food lovers and always have enchiladas and tacos on our weekly rotation. They are inexpensive and can be customized with veggies only or meat. :)

p.s. Your lunch salad looks delicious!

So weird but I've been eating Almond Cheese lately- it is a great snack (in place of string cheese) and good chopped up on salads. Can't wait for your asparagus recipe!

This really has nothing to do with what you had to eat yesterday, but I thought I'd introduce myself- I helped your mom with your wedding invites, recipe cards, and programs and she sent me a link to your blog and now I'm addicted! You've inspired me to focus on eating less boxed food and more homemade foods!

And by the way...I love your mom! For the small amount of time we spent together, she seems like such a great, fun lady! Congratulations on your wedding and your future as husband and wife!

New food discovery: chia seed. I've been stirring them into oatmeal and granola lately, but then I saw someone make lemonade with them! You soak them in water and it gets all gross & gooey, but then when you mix it with the acidic lemon juice, it cuts right through and makes a great drink! Try it instead of vitamin/protein water :)

Your salad looks great - I am very into the sweeter/nuttier salads these days.

I was at TJ's yesterday and got some of their new spice grinders. One was called African Smoke and the other was Coffee Bean, Chocolate and Sugar. They also have a Smoked Sea Salt Grinder, but I already had some or I would have definitely scooped it up!

I'm on a major quinoa kick lately. I've seriously been eating it morning, noon and night. I am happy eating it with a little salt and almond or walnut oil, which really brings out the nuttiness, but I am always looking for new quinoa recipes. And I just think everyone should be eating this superfood!

Hey Madison! I just realized the amazing-ness that is a crock pot. :-D Yesterday I threw in chicken, black beans, white beans, pineapple, salsa, and some chili powder. I ate mine with a little homemade guacamole and Tyler had his in a taco. It was great and Tyler loved it! I've been searching for recipes with tofu, although I don't think Tyler would like it.
Side question: what is your favorite brand or brands of peanut butter? And where do find the best prices on raw nuts?
